We have all been there haven’t we? The day slowly passes away, the clock reminds you that it is nearly dinner time but you have no inspiration. Either you just don’t feel like cooking or you have a little one who is fussy at meal times. You wonder endlessly if they will eat what you intend to make. That’s how this recipe was born and I am so excited to share it with you!
My Mum always says that everything we eat started somewhere in someone’s kitchen with them experimenting. No recipe was conjured up magically perfectly the very first time.
Well this was… I might sound like I’m bragging but it did turn out unbelievably good.
One day back in Ramadan 2021 (feels like a lifetime ago doesn’t it?) the clock started ticking away. I literally had no idea what I was going to make that my daughter would enjoy.
As the rest of us were fasting, I wanted to make something that would not take up so much of my time.
It was only half an hour till the usual dinner time. I knew that the calls of ‘I’m hungry!’ will starting ringing soon.
So what did I do?
I opened up the fridge and cupboards to see if there was anything that I could put together. The main items that attracted my attention were the bag of Baby Spinach, Yoghurt and Cheese in the fridge. As well as pasta in the cupboard.
Pasta is a hit with everyone isn’t it – can’t go wrong with that!
So without further ado, let’s get right into it!
- 500 Grams Pasta
- 500 Grams Spinach
- 500 Grams Red Pasta Sauce
- 1 Cube Garlic
- 1 Cube Ginger
- 1 tsp Cumin seeds
- 1/2 Tsp Paprika powder
- 1 tbsp Olive oil
- To taste Salt
- To taste Pepper
- 4 Tbsp Cheese
- 5 tbsp Yoghurt
- 1 tbsp Italian Herbs
- Put the pasta to boil
- Wilt down the spinach
- In a pan add olive oil
- Sauté the ginger/garlic with cumin seeds
- Add spinach
- Mix in paprika, cinnamon, salt and pepper
- Add red pasta sauce and yoghurt
- Add the cheese depending on how cheesy you like it.
- Sprinkle over the herbs

I have lost count the number of times I have made and have been requested to make this recipe. Each time I try something a little different, play around with the herbs and spices.
it has become that one particular meal that I know for sure my daughter will gobble down without hesitation.
